My Family and I went to Big Bubba's BBQ Restaurant at the Mohegan Sun Casino
in Uncasville Connecticut. We went to Casino to see the Trans-Siberian
Orchestra
. If you
have never seen them you must see them. It is a great way to
start the
Christmas Season.

We went before the show. We were seated and serve promptly. We were seated at 1:50 p.m. and our food arrived within 10 minutes in perfect order.

I had the Pulled Pork sanwich served with fries, coleslaw and potatoe salad. Everything was great. Nice tender meat and good sauce. I tried 2 of the three sauces with my fries (I never use catsup). The Sauces were all right not great.
I liked the Original Sauce more than the Hickory. The Hickory was too smokey. And it wasn't a natural tasting smoke flavor, more like a chemical based smoke
flavor. The coleslaw was very good as was the potatoe salad. I feel that great side dishes are as important as the main dishes to make it a good BBQ. We also had the Best Dang Corn Bread I have had in a long time.

My son had a fried Chicken Sandwich. I was a very tastey chicken. It must have been homemade batter. And I would guess that they pan fry the chicken.

Worth the trip if you are going to the Casino anyway.

casino.

Maurice's Carolina Gold Mustard BBQ


Quite possibly the best mustard based sauce I have ever tasted. Putting politics aside on this one (long story) it is a traditional Southern Carolina BBQ Sauce, Tasty, sweet and TANGY. Out of this world flavor, if you like mustard BBQ. On one trip down south we stopped by and had some of Maurice's famous bbq
and hospitality. I wouldn't stop again as I have already tried it but I do recommend that you stop. If not for the BBQ at least get a jug os sauce. They have it available in 18 ounce, 32 ounce, half gallon and 1 gallon.

The sauces also come in hickory, honey and spicy. Now if you like it hot then the spicy ain't nothing more then zippy. I recommend the original and honey. Get them by the half gallon at least or a case of the small bottles.

When my family goes on vacation we drive so that I can pull of anytime I see the words BBQ on the interstate. I have the most wonderful family because the trip up and down the east cost can take along time when I have to pull over so often.

Toad Sweat Lemon Vanillia Desert Hot Sauce

So why is there a hot sauce here? I will tell you why. It makes the best dang coleslaw you have ever tasted. It was the first commercially made desert hot sauce ever. It was created to be used on ice cream and cheese cake. When using it on ice cream I prefer using the Cranberry Orange flavored Toadsweat.
Try this Recipe for Iron Slaw:

1/2 cup Hellman's mayonnaise
1 bottle (5 ounces) Lemon Vanilla Toad Sweat
1 bag pre-cut slaw mix
salt and black pepper to taste
Blend the mayonnaise and Toad Sweat together well. Stir into the slaw mixture and add salt and pepper to taste. Enjoy!

Bronco Bob's Raspberry Chipotle Sauce



This is a very popular sauce and a very versatile sauce. How many grilling sauces do you know of that you can use for breakfast (waffles or pancakes), lunch (as a sandwich spread) an dinner ( duck anyone?)? What more does one need in a sauce?It is thick, sweet, smokey and delicious. Can be uses as a glaze or as an ingredient in a dip.

ROASTED RASPBERRY CHIPOTLE SAUCE QUICK TIPS _________________________________________________________
  • Pour Raspberry Chipotle Sauce over softened cream cheese or warmed Brie for a quick and delicious appetizer. Serve with assorted crackers.
  • Spread warmed flour tortillas with 1 tbsp cream cheese, drizzle with Raspberry Chipotle Sauce, roll up and enjoy a quick, easy snack.
  • Heat tamales in the oven. Put on serving platter, and spoon warmed Raspberry Chipotle Sauce over the tamales. Garnish with fresh cilantro.
  • Pour warmed Raspberry Chipotle Sauce over waffles, pancakes, or French toast. Extra quick using frozen breakfast items.
  • Place whole links of sausage on grill, cook until done. Slice sausage into ¼ to ½ inch rounds. Place sliced sausage on platter and cover with warmed Raspberry Chipotle Sauce.
  • Dip medium to large shrimp (peeled) in Raspberry Chipotle Sauce. Wrap shrimp individually with ½ strip of bacon and secure with toothpick. Marinate shrimp and bacon in sauce for 1 hour. Place shrimp on grill and baste with sauce while cooking. Cook until done.

    CRISPY RASPBERRY DUCK
    ______________________________________________________
    1 5 to 6 lb. duck* 1 orange, quartered;
    1 bottle Bronco Bob’s Roasted Raspberry Chipotle Sauce
    Preheat oven to 350 degrees F.
    Rinse duck inside and out.
    Dry cavity and place 1/4 cup Bronco Bob’s Roasted Raspberry Chipotle Sauce and orange quarters in cavity. Place on rack in roasting pan, breast side up in preheated oven. Roast for approximately 2 ½ to 3 hours, basting every 30 minutes with Bronco Bob’s Roasted Raspberry Chipotle Sauce. Let rest 10 minutes and carve. Garnish with a few fresh raspberries and pass extra warmed sauce when serving. Serves 4 to 6.*A roasting chicken may be used instead of duck.

Peppadew Peppers


These have been around for a few years now, but you still don't hear much about them. I don't know why they are so awesome. My first experience with these little gems is when a sales rep had sent me a few samples and I have been in love with them since.
Words can't describe them they must be experienced.These sweat peppers are great on sandwiches or straight out of the jar.

Try this recipe for Grilled Peppadew Quesadilla

You will need:
10 - 6 inch Flour Tortilla's
1 Cup Shredded Extra Sharp Cheddar Cheese
1 Cup Shredded Monterrey Jack Cheese
1 Cup Diced Grilled Chicken Marinated in D.L. Jardines Fajita Marinade.
1/2 cup Chopped Peppadew Peppers (hot or mild)Olive Oil
Salsa and Sour Cream for dipping
Heat up your grill to medium hot. Blend the two cheeses together. Using a pastry brush, brush olive oil on one side of the tortilla and place on grill. Put a layer of the cheese down on the tortilla and sprinkle some chicken and Peppadew Peppers on top of the cheese. Brush oil on another tortilla and place that tortilla (oil side up). Grill for about three minutes or until golden brown then flip grill until the cheese is melted and the tortilla is golden brown. Slice into quarters and serve hot off the grill.

Big Rick's Original BBQ Sauce


Rick Doty has a motto, "Big guys always have the best eats" and judging by his original BBQ sauce he at least does.
The sauce is a tomato based sauce that is thick, rich and delicious. I can't figure out what it is about his sauce that makes so good. It's just one of those things that makes you stop eating to say, damn that's good.
We have used it on Ribs of course, chicken and pork chops and mashed potatoes. Haven't seen anything it doesn't go with yet. I suppose there is. I will let you know it I do.
I give Big Rick's original my highest recommendation. It is available through more than 150 specialties stores throughout the USA. Big Rick's Original recipe is from the old days!
